【吃遍好滋味】台南小吃潮味二代店‧松霖鍋燒始府

台南人對同記安平豆花旁的「松霖茶坊」一定不陌生,這間結合手搖泡沫飲與鍋燒麵的在地小吃店,2年前創始人黃寶嬌決定歇業休息,讓許多忠實顧客感到扼腕,直到去年底兒子蔡松霖返鄉,決定將媽媽鑽研多年的鍋燒意麵傳承下去,並結合懷舊復古的紅磚牆和傳統玻璃花窗,以及西洋圖騰地磚和工業風等新元素,在原址隔壁開起「松霖鍋燒始府」。

蔡松霖表示,店內採用蔬果和豚骨細熬慢煮出高湯,搭配與製麵師共同研發的特製意麵,有著細細蛋香、口感Q彈且不易軟爛,還有以溫體豬肉耗時48小時醃製成的獨門黑胡椒肉片,3項經典組合正是招牌鍋燒意麵的美味關鍵。蔡松霖說:「如同說到日本就會想到拉麵一般,我們用匠人精神製作鍋燒意麵,期望這簡單的家常美味能成為府城經典飲食文化特色,一直流傳下去。」
