〈南部〉入選「國飯」 屏東媳婦傳承滷肉美味

〔記者邱芷柔/屏東報導〕台灣國民美食「滷肉飯」,多次受到國際媒體關注,經濟部今年舉辦台灣滷肉飯節,徵選全台代表性店家行銷台灣「國飯」,從台南嫁到屏東潮州的蔡鳳珠,傳承自外公及媽媽的好手藝,一碗二十元的滷肉飯賣了十年,成為屏東唯一入選的店家。

經濟部商業司從今年六月起邀請民眾、地方政府及美食達人推薦各地滷肉飯店家,最終從一百二十三家報名業者中,嚴選出今年度全台七十八家非吃不可的滷肉飯,潮州鎮公所力推的「台南蔡家虱目魚」滷肉飯是屏東唯一入選的店家。

蔡鳳珠說,她選用松阪豬、後腿肉以二比一的方式,再拌入油脂比例合宜的豬皮,讓滷肉Q彈富有膠質、油而不膩,每天現炒紅蔥頭,搭配古法手工純釀的黑豆醬油,再加入甘草一起滷煮兩個半小時,就是美味的關鍵。

蔡鳳珠說,外公在日治時期就在賣快餐,媽媽傳承外公的好廚藝,成為屏東媳婦後,特別向媽媽學來滷肉的方法,在丈夫退休後落腳潮州,把家傳的好味道跟地方分享。
