〔記者賴筱桐/新北報導〕新北市經濟發展局舉辦「蛋黃酥節」,決賽今天登場,店家大比創意,推出柚子及蕃茄造型蛋黃酥,還有養生的紅藜口味,令人驚豔。今年最大贏家是蘆洲龍鳳堂餅舖,囊括傳統組冠軍和創意組亞軍;創意組由拉菲樂烘焙坊製作的「天柚.添佑」蛋黃酥奪冠,象徵團圓及祝福。現場產品被民眾搶購一空,供不應求。

蘆洲龍鳳堂餅舖 傳統組創意組「金包銀」

評審李哲松指出,龍鳳堂的烏豆沙蛋黃酥強調外皮層次感,大小勻稱,蛋黃香氣與內餡充分結合,烤完10分鐘仍保有剛出爐口感,不油不膩,烘烤火候恰到好處。而拉菲樂烘焙坊的柚子蛋黃酥外型討喜,內餡襯托出柚子的果肉香氣,獲評審團一致讚賞。

龍鳳堂餅舖大姐李秀梅說,傳統烏豆沙蛋黃酥是店內招牌,每年中秋節檔期平均賣4萬至5萬顆,今年研發柚子蛋黃酥,較困難的地方是塑型,烘烤時外層須塗上奶水,營造柚子表皮的粗糙感。

拉菲樂烘焙坊師傅林慶儀說,「天柚.添佑」蛋黃酥內餡選用台灣出產的柚子,柚子皮熱燙後蜜糖,拌上松子仁與柚子果泥,蛋黃部份用調合的「奶黃」取代,外皮添加抹茶粉和柚子皮,呈現天然綠色,並灑上金粉,色香味俱全。
