〔記者賴筱桐/新北報導〕經濟發展局舉辦的「蛋黃酥節」活動,昨天進行決賽,店家比拚創意,推出柚子或柿子造型的中秋節應景蛋黃酥,還有養生的紅藜口味,口味多元;今年最大贏家是蘆洲區龍鳳堂餅舖,囊括傳統組冠軍和創意組亞軍,創意組冠軍由拉菲樂烘焙坊製作的「天柚.添佑」蛋黃酥奪得,象徵團圓及祝福。

評審李哲松指出,蘆洲區龍鳳堂的烏豆沙蛋黃酥,強調外皮層次感、大小勻稱,蛋黃香氣與內餡充分結合,烤完十分鐘仍保有剛出爐的口感,不油不膩,烘烤火候恰到好處;拉菲樂烘焙坊的柚子蛋黃酥外型討喜,內餡襯托出柚子的果肉香氣,獲評審團讚賞。

龍鳳堂餅舖李秀梅說,今年研發的柚子蛋黃酥,較困難的地方是塑形,烘烤時外層要塗上奶水,營造柚子表皮的粗糙感;拉菲樂烘焙坊師傅林慶儀說,「天柚.添佑」蛋黃酥內餡選用台灣出產的柚子,將皮熱燙後蜜糖,拌上松子仁與柚子果泥,蛋黃用調合的「奶黃」取代,外皮添加抹茶粉和柚子皮,呈現天然綠色並撒上金粉,色香味俱全。

板橋聯美食品推出紅藜蛋黃酥,老闆林俊仲表示,傳統蛋黃酥比較油膩,現代人講求養生健康,蛋黃酥外皮添加紅藜和紫米,內餡為烏豆沙,低糖、低油,吃起來清爽無負擔。
