本來在嘉義布袋港開船的船長陳冠魁,因為遊客銳減他另謀生路,北漂到彰化鹿港,本來想賣麵線糊,偶然機會,他試煮一碗古早味豆簽羹,給90多歲阿嬤吃,沒想到阿嬤超級感動。

「豆簽」是米豆粉做的,麵條狀,是1960年代農業社會小吃,口感比較澀,陳冠魁請麵條業者在豆簽中加鴨蛋,麵條變滑順,加鮮味湯頭煮成羹,是有古早味的平民美食。

陳冠魁提到,「以前豆簽是比較貧苦人在吃,所以吃起來沒有說很好吃,我們為了符合口味,所以豆簽會勾芡起來,會比較順口、比較滑順。」

海味豆簽羹加上超霸氣海鮮料,讓陳冠魁在以小吃出名的鹿港小鎮也培養了不少主顧客,繼續流傳這阿嬤的傳統美味。
