本來在嘉義布袋港開船的船長陳冠魁，因為遊客銳減他另謀生路，北漂到彰化鹿港，本來想賣麵線糊，偶然機會，他試煮一碗古早味豆簽羹，給90多歲阿嬤吃，沒想到阿嬤超級感動。
「豆簽」是米豆粉做的，麵條狀，是1960年代農業社會小吃，口感比較澀，陳冠魁請麵條業者在豆簽中加鴨蛋，麵條變滑順，加鮮味湯頭煮成羹，是有古早味的平民美食。
檢視相片陳冠魁提到，「以前豆簽是比較貧苦人在吃，所以吃起來沒有說很好吃，我們為了符合口味，所以豆簽會勾芡起來，會比較順口、比較滑順。」
海味豆簽羹加上超霸氣海鮮料，讓陳冠魁在以小吃出名的鹿港小鎮也培養了不少主顧客，繼續流傳這阿嬤的傳統美味。
