〔記者簡惠茹/台北報導〕端午節即將到來,除了大家熟知的「北部粽」和「南部粽」,其實還有結合南北特色的「中部粽」,主要差別在於糯米的煮法,和加入的食材差異,而且除了上述台灣三大粽,台灣各地還有充滿地方特色的粽子,例如新北北海驛站石門肉粽、新竹山城菜脯炒肉末的客家肉粽,及苗栗友善耕作的彩虹玉米粽。

農委會農糧署表示,端午節是重大節慶,粽子更是代表端午節食品,台灣三大名粽的區別,主要在於糯米的煮法,和加入的食材差異,「北部粽」是加入調味料先炒再蒸,讓米粒入味;「南部粽」則是糯米先浸泡後加三層肉等醃製餡料,以大火水煮至熟透,食用時淋醬或灑上花生粉;另外還有結合南北特色,先將糯米浸泡,配上佐料炒到三分熟後再加入餡料再蒸至全熟的「中部粽」。

除了分區域的特色粽子,農糧署表示,台灣各地還有具有地方特色的肉粽,包含新北北海驛站石門肉粽、新竹山城菜脯炒肉末的客家肉粽,及苗栗友善耕作的彩虹玉米粽等,彩虹玉米粽還會加入蘿蔔乾、梅花豬肉和蝦米等食材。
