〔記者蘇福男/高雄報導〕梓官區烏魚子地方評鑑昨在梓官區漁會戀戀蚵仔寮門市前廣場熱鬧登場,由蔡明達和黃志華分別奪下五至七兩重、七兩重以上等級的養殖烏魚子第一名,將再角逐全國養殖烏魚子寶座。

國內養殖烏魚目前集中在新竹、彰化、雲林、嘉義、台南和高雄等地,一○五年養殖面積約六百公頃,去年烏魚子產量約○.七公噸,原以雲林養殖面積最大,今年嘉義、台南已後來居上。

評鑑項目除嚴格審查養殖烏魚的原料來源,同時對烏魚子外觀、風味、質地與口感進行評分。評審之一高雄科技大學食品科學系教授蕭玉田表示,今年參賽養殖烏魚子口感不如去年,油耗味較重、比較柔軟不夠爽口,外觀血絲太多,可能在前置處理不夠精細,也可能與魚種有關。

評鑑結果前三名名單:五至七兩重等級第一名蔡明達、第二名許晏美麗、第三名黃志華;七兩重以上等級第一名黃志華、第二名蔡振邦、第三名蔡明達。
